“Whim SAKE & TAPAS” is a bar directly managed by WAKAZE, adjacent to the brewery surrounded by glass, located in the streets of Sangenjaya.
Enjoy the freshly brewed doburoku and our signature sakes, with the various pairings of tapas using seasonal ingredients mainly produced from the Shonai region of Yamagata.
While gazing at the sake production and enjoying delicious sake and dishes, we hope to provide a place where new ideas and opportunities can be born “on a whim”.

Seasonal cuisine using ingredients produced in Shonai. We directly order fresh, seasonal vegetables and fruits from the Shonai region of Yamagata Prefecture, and prepare dishes according to the season.
Main dishes with . Dishes seasoned with balsamic vinegar and sake-lees will stimulate your appetite.
Tapas that are the perfect pairs with sake. Tapas such as mackerel salad dressed with mustard, or mascarpone dips are perfect paired with sake.
Signature main-brand WAKAZE sake. We provide half-glasses (50ml) as well. We also have sake cocktails where you can enjoy new tastes of sake.
Sangenjaya doburoku. We provide freshly made doburoku from the adjacent brewery, in which the flavors changes from tank to tank, creating one-of-a-kind flavors.
Sagenjaya FONIA. From small production scales, the FONIA series are unique, joso-sake (pressed sake). One can enjoy the CRAFT SAKE brewed in Sangenjaya.
